Apple Pie Smoothie

apple pie smoothieI miss you guys! 16 days… I’m not counting or anything… 16 days left of my general medicine rotation, and then I will have my weekends back and more kitchen time!! It has been so hard being away from my kitchen this long, and I still have a few weeks to go. These past few weeks have been filled with long, exhausting days at the hospital, and I haven’t seen very much sunlight (I get there when it is dark and leave when it is dark). Living in San Francisco, I am already as white as a ghost, so this no-sunlight-period thing definitely isn’t helping. When I am at home, I try to eat as healthy as I can. I have been learning how to throw together some quick and healthy salads filled with a lot of vegetables, and making smoothies to take with me on-the-go. My new favorite is this apple pie smoothie, which uses a fresh apple and some spices. It tastes like apple pie in a glass! You know what they say, an apple a day keeps the doctor away…

Ingredients
  • 1 gala apple, peeled and cored
  • ½ cup non-fat plain yogurt
  • ¼ tsp vanilla extract
  • 1 tsp brown sugar
  • ¼ tsp nutmeg
  • ¼ tsp cinnamon
  • Pinch of ground cloves (optional)
  • 1 cup ice cubes
Instructions
  1. Chop the apple into 1 inch cubes.
  2. Add all ingredients to a blender and pulse until well blended.
  3. Top with whipped cream and cinnamon for an extra sweet treat!
Makes 2 cups

    Yup, I can see where this smoothie would be both delicious and filling…with a serving of fruit and dairy/protein, a meal in a glass. I’m sure your internal medicine rotation can be quite intense (I worked on a hem-onc unit for 5 years)…hope you can squeeze in a little R&R soon!!!

    Yes, SF weather is getting so cold…I woke up at 7 today and it was dark and cold..just wanted to stay in bed for long.

    Okay so I tried this myself…Abseloutely delicious! Tastes just like pie…

    However, I mistakenly added greek yogurt instead of normal yogurt which gave the smoothie a satisfying “pancake batter” flavor. I really liked it, but will be trying with normal yogurt!

    Thank you for posting this recipe! I had all the ingredients already at home, and it was really easy and fun to make and eat!
