Baked Mini Chocolate Donuts

chocolate donutsThis morning I woke up with one thing on my mind: chocolate glazed, chocolate donuts with sprinkles. That’s the beauty of summer vacation – I get to sleep in, and then spend the whole morning baking these delicious chocolate donuts. They are only 60 calories each, and they are baked, which makes them much healthier than your typical bakery donut which is drenched in oil. Finally, something that doesn’t kill my whole run! I love them even more than my baked glazed donuts, because I love chocolate so much (who doesn’t?). These chocolate donuts aren’t super sweet, which is perfect because the chocolate glaze definitely makes up for it without overdoing the sweetness. Basically, they are perfect. Happy Friday everyone! Ingredients
Mini chocolate donuts
  • ¾ cup all-purpose flour
  • ¼ cup unsweetened cocoa powder
  • ⅓ cup granulated sugar
  • 1 tsp baking powder
  • ¼ tsp salt
  • 2 tbsp plain yogurt
  • ¼ cup milk
  • 1 egg
  • 3 tbsp vegetable oil
  • ¼ tsp vanilla extract
Chocolate glaze
  • 2 tbsp unsalted butter
  • ¾ tsp light corn syrup
  • 1 tbsp milk
  • ½ tsp vanilla extract
  • 2 tbsp semisweet chocolate chips
  • ½ cup confectioners' sugar
  • Sprinkles for decoration
Instructions
  1. Preheat oven to 375 degrees F.
  2. Whisk dry ingredients together in a mixing bowl.
  3. Add all remaining ingredients and stir very well, until smooth.
  4. Spray mini donut pans with non-stick spray, and fill ¾ full with batter.
  5. Bake for 7 minutes, until donuts spring back when touched lightly with your finger.
  6. Let cool on a wire rack before adding the chocolate glaze and decorating.
  7. TO MAKE THE CHOCOLATE GLAZE: In a small saucepan over low heat, add butter, corn syrup, milk and vanilla. Once butter is melted, add chocolate chips and stir until melted. Add confectioners' sugar and stir until smooth. Glaze donuts immediately, and keep over the lowest heat to keep warm while glazing them. Add sprinkles immediately because the glaze sets very quickly.

      I know right! Thats the problem – they are only 60 calories each, but then when you end up eating 10 throughout the day…oops! haha

    These are cooling on my counter right now…I cannot WAIT to frost/eat them! I made them in a mini muffin pan and was only able to get 16 mini muffins out of it (I think my “minis” are larger than most), but that’s still only 100 calories for a frosted. chocolate. donut. !!! My husband is going to flip when he gets home – he’s a chocoholic with a weakness for donuts. Such a fun recipe – thank you!

    WOW! De-li-cious!!! I’ve searched everywhere for a good baked chocy doughnut recipe- went thru all my baking cookbooks, and all the usual online haunts, but every recipe I found was for fried.
    Stumbled across your recipe- sounded great, baked them for my wife this morning, and she LOVES them. Thank you so much! (I doubled the recipe and made 12 full size doughnuts- increased the cook time another 3 minutes.)
