Hasselback Sweet Potatoes

  • 2 medium sweet potatoes
  • 1 tbsp butter
  • 1 tbsp olive oil
  • 1 tsp thyme
  • Salt and pepper
  • 2 tbsp bread crumbs
  • Fresh parsley for garnish
  1. Preheat oven to 425 degrees F.
  2. Wash and dry sweet potatoes very well.

  4. Carefully make thin slices about ⅔ down along each sweet potato.
  5. Melt butter in microwave for 15 seconds and add olive oil, thyme, salt and pepper. Mix well.
  6. Drizzle half of the butter over each potato, leaving half for later. Use fingers to spread all around, and get in between the slices as much as you can.
  7. Bake for 30 minutes, then remove and sprinkle breadcrumbs over each potato, getting in between slices.
  8. Drizzle remaining butter mixture over the potatoes and bake for another 15 minutes.
  9. Remove from oven, garnish with fresh parsley, and serve warm. hasselback potato
