No-Bake Cocoa Banana Energy Bites

Total time: 1 hour
  1. Line a baking sheet with parchment paper.
  2. Crush the banana chips with the back of a butterknife and add to a large mixing bowl.
  3. Add the oats and cocoa to the banana chips and mix together.
  4. Add the peanut butter and honey and stir well.
  5. Place in the refrigerator and chill for 30 minutes.
  6. Once chilled, remove from the refrigerator and form small 1-inch balls with your hands.
  7. Place onto a baking sheet and chill for 15-30 minutes (until firm).
  8. Store in a sealed container in the refrigerator for up to one week.
Makes 2 dozen 1-inch balls
