Chocolate Chip Pumpkin Muffins

Ingredients
  • 1 can organic pumpkin (or 1½ cups pumpkin purée)
  • 2 eggs
  • ½ cup sour cream
  • ½ cup brown sugar
  • ¼ cup granulated sugar
  • 5 tbsp butter, melted
  • ¼ cup milk
  • 2 cups all-purpose flour
  • 1 tbsp baking powder
  • ½ tsp salt
  • 1 and ½ tbsp cinnamon
  • 1 tsp all-spice (optional)
  • ½ tbsp ground ginger
  • ½ cup chopped walnuts
  • ½ cup semi-sweet chocolate chips
Instructions
  1. Preheat oven to 350 degrees F.
  2. Add pumpkin, eggs, sour cream, sugars, and butter to a mixing bowl and stir well.
  3. In a separate bowl, whisk together the flour, baking powder, salt, and spices.
  4. Stir in the dry ingredients to the pumpkin batter a little at a time, then add the milk.
  5. Stir in the chocolate chips and walnuts.
  6. Spoon the batter into a greased muffin pan.
  7. Bake for 30 minutes, until a toothpick comes out clean.
  8. Remove from oven and sprinkle with cinnamon sugar. Let cool 5 minutes, then transfer to a wire cooling rack.
