Chewy Peanut Butter Cup Cookies

  • ¼ cup unsalted butter
  • ½ cup creamy peanut butter
  • ¼ cup granulated sugar
  • ¼ cup brown sugar
  • 1 tsp vanilla extract
  • 1 egg
  • ¾ cup all-purpose flour
  • ½ tsp baking soda
  • ½ tsp baking powder
  • ¼ tsp salt
  • 1 cup chopped peanut butter cups
  1. Preheat oven to 350 degrees F.
  2. In a standmixer or with an electric mixer, cream together the butter, peanut butter, and sugars.
  3. While beating on low speed, add the egg and vanilla.
  4. In a separate bowl, whisk together the flour, baking soda, baking powder, and salt.
  5. Slowly add to the peanut butter mixture while mixing on low speed.
  6. Once blended, stir in the peanut butter cup pieces by hand with a spoon.
  7. Roll 1-inch balls of dough in your hands and place on a baking sheet.
  8. Bake for 12 minutes.
  9. Transfer to a cooling rack.
