Game Day Vegetarian Chili Nachos + Giveaway

  • 1 package Progresso Roasted Vegetable Chili with Three Beans
  • 1 tbsp olive oil
  • 1 zucchini, chopped
  • 4 cups tortilla chips
  • 1 cup shredded cheddar and Monterey Jack cheese blend
  • 2 green onions, thinly sliced
  1. Heat the olive oil in a pot and add the chopped zucchini. Cook for 10 minutes until the zucchini is soft and slightly browned, stirring occasionally.
  2. Pour the Progresso chili over the zucchini and stir. Heat through.
  3. Preheat the oven to 350 degrees F.
  4. Add the tortilla chips to a baking dish and top with the chili and cheese.
  5. Bake in the oven for 7 minutes, until the cheese is melted.
  6. Sprinkle the green onions over the top.
