Pumpkin Waffles with Cinnamon Cream Cheese Glaze

Cinnamon Cream Cheese Glaze
  • 2 oz cream cheese, room temperature
  • ¼ cup confectioners' sugar
  • ¼ tsp vanilla extract
  • ¼ tsp ground cinnamon
  • 2 tbsp milk
Pumpkin Waffles
  • ½ cup canned pumpkin
  • 1 cup buttermilk
  • 2 eggs
  • 2 tbsp coconut oil
  • 2 tbsp brown sugar
  • 2 tsp ground cinnamon
  • ½ tsp ground cloves
  • 1¼ cups whole wheat flour
  • 2 tsp baking powder
  • ¼ tsp salt
  1. For the glaze, add all ingredients to a stand mixer or mixing bowl and beat with an electric mixer until smooth and well blended. Add more milk for a runny texture, and less milk for a thicker glaze.
  2. Preheat the waffle maker.
  3. Add the liquid ingredients (pumpkin, buttermilk, eggs, coconut oil) to a mixing bowl and whisk together.
  4. Add the remaining ingredients and stir with the whisk until all are well blended.
  5. Drop ¼ cup batter onto a greased waffle mold and close the waffle maker.
  6. Cook until golden brown and firm, about 2 minutes.
