Red Lentil Soup #SundaySupper

Ingredients
  • 2 tsp olive oil
  • 1 small red onion, chopped
  • 2 cloves garlic, chopped
  • 1 cup dried red lentils
  • 2 carrots, peeled and chopped
  • 2 celery stalks, chopped
  • 1 parsnip, chopped
  • 1 tbsp paprika
  • 4 cups vegetable stock
Instructions
  1. Heat the olive oil over medium heat in a large pot and add the onion and garlic. Cook for 5 minutes, stirring occasionally.
  2. Add the remaining ingredients and bring to a boil. Cover and reduce the heat to low. Simmer for 25 minutes.
  3. Cool the soup to room temperature, then blend in batches and return to the pot to reheat.
