Strawberry Cheesecake Bites

  • ½ cup light cream cheese, room temperature
  • 1 tbsp confectioners' sugar
  • 2 tbsp strawberry preserves
  • 6 strawberries, rinsed, hulled and halved
  • 2 tbsp graham cracker crumbs
  1. Add the cream cheese, sugar and preserves to a blender and pulse a few times until well mixed.
  2. Add to a cake decorating bag (or ziplock bag if you don't have one) and pip onto the strawberry halves.
  3. Sprinkle graham cracker crumbs on top.
  4. Chill until ready to serve.
