Mango Lassi

The past few weeks I have been preparing for the ultimate final exams: my licensure exams! I have been taking my books with me everywhere. If you are wondering where I have been lately, that’s your answer. I have missed cooking and blogging so much, but in two more weeks it will all be over.

For my study breaks, I still make time to make something quick and easy. Today I blended up a mango lassi – my favorite drink to order when we go out to eat at Indian restaurants. It has been sunny and warm here in San Francisco lately, so a mango lassi is the perfect, refreshing drink! It is made with a few simple ingredients: mango, plain yogurt, honey and a dash of cardamom (you can also use allspice instead). You can use frozen mango, or cut a mango into cubes and freeze for 30 minutes before making your mango lassi. It tastes like a creamy mango smoothie!

The past few nights I haven’t been sleeping well. I am heartbroken over the tragic news last weekend in Isla Vista, CA – a small college town where I spent four years of my life. My heart badly aches for all involved…

Ingredients
  • 1 cup frozen mango cubes
  • ½ cup plain yogurt
  • 2 tbsp milk
  • ½ tsp honey
  • Pinch of cardamom (can substitute allspice)
Instructions
  1. Add all ingredients to a blender and blend well.
Makes 2 smoothies
