Goodbye Halloween, helllllloo Holiday Season!

Can you tell I am really excited about this time of year? Like many of the stores, I am already getting ready for Thanksgiving and Christmas! As we move quickly towards the most exciting holidays of the year (at least in my opinion :D), some of us may also be feeling a little stressed. Along with the holidays comes entertaining, and with entertaining comes a lot of work preparing food, drinks, and entertainment. This week’s Sunday Supper topic is “Easy Holiday Entertaining” to give you some stress-free holiday recipe ideas. This peppermint hot chocolate recipe is one of my go-to holiday entertaining recipes, because it is super quick and easy to make, and completely fool proof! 

Since we are already fighting off those extra pounds left and right during the holiday season, my peppermint hot chocolate recipe is a “skinny version” since it doesn’t require the use of heavy cream. For best results, use whole or 2% milk. I find that anything lower makes it taste a little watery.

A fun way to decorate your peppermint hot chocolate just before serving on a tray to your guests is topping them with whipped cream, chocolate syrup, and crushed candy canes. I also stick a mini candy cane in the side of the glass to melt into the chocolate and for guests to enjoy while sipping their peppermint hot chocolate. It gives the hot chocolate even more peppermint flavor.

Ingredients
  • 2 tbsp water
  • ¾ cup unsweetened cocoa powder
  • ¼ cup granulated sugar
  • 4 cups 2% milk
  • ½ tsp peppermint extract
  • 4 mini candy canes (plus crushed for topping)
  • Whipped cream and chocolate syrup for topping
Instructions
  1. Heat a medium pot over low heat and add water, cocoa powder and sugar. Whisk until smooth.
  2. Add the milk and heat until you see the first bubble form, whisking at least every 20 seconds.
  3. Remove from heat and stir in the peppermint extract.
  4. Pour into 4 glasses and top with whipped cream, chocolate syrup, and candy canes.
Makes 4 cups

    This looks a heck of a lot better than the schnapps spiked Swiss Miss we used to drink in college! A perfect treat for Christmas morning!
