Simple Peach Tart

I used to make most of my fruit tarts with some sort of filling, but then I discovered how delicious tarts can be without any filling at all. By keeping fruit tarts simple, you really get to enjoy the flavor of the fruit itself, and not be distracted by the filling. You could make this simple fruit tart with any kind of fruit you want: strawberries, blueberries, apples, peaches… I don’t even add sugar anymore to the fruit and like to keep it natural, especially because I don’t like my kids having extra sugar when there is already enough from the fruit naturally. Yes, it does not taste as sweet, but it is much healthier and I have personally learned to enjoy fruit without extra sugar. I am now making pies, tarts, and pastries with fruit fillings that do not have any added sugar, and I really enjoy them being less sweet!

For the dough, I make this basic tart crust in my Thermomix® using the kneading function to bring the dough together nicely before pressing it into the tart pan. For this peach tart, I simply sliced the peaches, but if you are using strawberries, cherries, or blueberries you could cook it in the Thermomix® and use it as a more jam-like filling.

Simple Peach Tart

  • 5 tbsp unsalted butter
  • 1 cup flour
  • 1/4 tsp vanilla extract
  • 1 pinch of salt
  • 3 tbsp cold water
  • 2 peaches
  1. Preheat the oven to 400 degrees F.

  2. Add all ingredients to a Thermomix® mixing bowl and knead for 2 minutes.

  3. Press the crust into a tart pan.

  4. Slices the peaches and remove the stone, the layer on the crust.

  5. Bake in the oven for 35-40 minutes.
